Cheesy Spinach Artichoke Dip

I first made this for my friends halloween party. She is like I don't really think i like artichokes, then after she tasted it she is like "oh my goodness I have to have the recipe". It was a big hit at the party!

Gather your fixings! the nice thing is that this is stuff I normally have on hand or things that are fairly shelf stable. Just incase you need to party in a hurry!! 
Sauté your garlic and oil on low till its soft ( I used garlic paste this time, wasn't as good). Then add in your flour and let cook for a bit.
I liked canned spinach just fine for this recipe, but this brand was all stems. Frozen or cooked fresh would also work great. Anyway just make sure you rinse it well and then drain it very very well. i rang mine out between a towel. finally give it a rough chop.
These artichoke hearts from Costco were amazing and beautiful. I gave them a drain on a towel , gentler then the spinach and gave them a rough chop .
Add both to the rue to warm them up a little bit. This isn't necessary since everything will just be basically whipped together in a minute, I just thought it might bring out a bit of the flavors.
Then I take this vegetable soup pack
and give it a grind!!! between this and the cheese you won't want to add any salt.
Added the soup mix to the cream cheese, mayo, and yogurt. At this point add the nutmeg ( it makes a lot of difference).
Add your rue and veggies, also your mozzarella  and parmesan
mix!
Add to your loveliest heat proof dish. At this point you can wrap it up and wait just before you party to heat and eat. The first time I made this i added cheese on top, as well which looked prettier, but made it a little harder to scope.

Cheesy Spinach Artichoke Dip

Ingredients
  • 2 cans Spinach rinsed and drained
  • 1 cup Artichoke in water drained
  • Hand full of Garlic chopped and sautéed in oil 
  • 1/3 cup mayonnaise
  • 1/3 cup thick yogurt (or sour cream)
  • 8 oz cream cheese
  • 1/2 cup mozzarella
  • 1/4 cup parmesan
  • 1 pack Vegetable soup/dip mix ground up
  • Pintch of nutmeg
  • 4 - 5 tablespoons of flour
Cooking Directions
  1. Take your Garlic oil mixture add your flour and cook till it stops smelling raw. You might need a touch more oil if your mix looks too dry.
  2. Then add all your ingredients together in a bowl, adding the artichokes last as not to brake them up to much.
  3. once every thing is well combined add to your favorite heat proof dish
  4. Brown in the oven at 350 till warmed threw before serving
